Banana Ice Cream Love

mmmmm!! We  have been eating Banana Ice Cream for so long and I have never posted it! I am sorry not to have shared this beloved ‘secret’ recipe with everyone before!! It couldn’t be simpler (to make and ingredients) and is so delicious! For us it is super easy because we always keep a bunch of frozen bananas in the freezer to make smoothies and ice cream, so there is no planning for this fabulous dessert, ever! Since this recipe is really just bananas, you can enjoy it anytime; even for breakfast!! How great is that, Ice Cream for Breakfast! There are so many twists and additions you can make with this recipe, so have fun with it! Let me know anything else you try and love!

Banana Ice Cream

1-2 frozen bananas per person serving
any toppings or additions you want to add

So Simple! Just take the bananas and blend away in your Vita-mix, Blend-tec, blender or food processor until smooth. ENJOY 🙂

Suggested Topping or Add-Ins

  • The pictures in this post, we used our beloved Agave Pecan Butter, basically making an amazing frozen version of  Chocolate-Covered Katie’s Banana Butter
  • Sometimes we add in Cocoa Nibs and we get amazing Chocolate Chip Ice cream
  • ChocAgave –yummy raw chocolate sauce, or just use regular chocolate syrup
  • Goji berries for a great chewy taste
  • add other berries in the mixture to change up the taste, or as a topping
  • add cocoa powder to make chocolate ice cream
  • maca, mesquite, lucuma , protein powders
  • have fun, this is such a great treat to play with

Chocolate-Covered Katie’s Banana Butter

Chocolate-Covered Katie came up with this great idea of mixing peanut butter and bananas to make a deelish Banana Butter! Adding the banana makes an amazingly spreadable and much lower calorie butter. You can make it thinner or thicker depending on the amount of nut butter you use. This recipe is so simple yet so super enjoyable!

I know this would be great with any nut butter but because I had just “made” my deelish Agave Pecan Butter I thought this was perfect time to use it. The butter was the perfect dip! We enjoyed this with apples and with pita chips as well. So creamy and sooo deelish!!

Chocolate-Covered Katie’s Banana Butter
Makes about 1.5 cups

  • 2 bananas
  • 8 tablespoons of nut butter

Super simple…. just blend together and enjoy!


Agave Pecan Butter Surprise

Sometimes while making a recipe in your head it doesn’t always come out as planned. But sometimes you are left with a welcome surprise. That is how I came up with the Agave Pecan Butter. It is a great, super smooth spread and still raw! You don’t often see super smooth raw spreads and this one is a good one. I wish all mistakes were this successful haha! Of course if you want less butter half or quarter the ingredients. This is a great dip for apples or substiute for any nut butter.


Agave Pecan Butter Surprise

3 cups Pecans
1/4 cups Agave
1/2 cups Water
dash of celtic sea salt

Blend the pecans till a fine flour and then until it forms a butter. Add the agave, water and salt and continue processing until smooth and deeelish!


Almond Butter Cups

yields about 1 1/2 quarts

This recipe make many delicious, decadent, chocolaty squares. So if you do not want leftovers or do not have a crowd to feed I would suggest you half this. But I like leftovers 🙂 So I am happy with having delicious little bites in the freezer. The great thing about these is that they are so satisfying you don’t need too many.

1 cup almond butter
1 1/2 cup agave, divided
2 cups coconut oil, divided
1/2 tablespoon sea salt
1 cup cacao nibs

  1. Mix almond butter, 1/2 cup agave, 1/2 cup coconut oil, and sea salt in medium bowl; keep in warm place until ready to use.
  2. Blend cacao nibs, remaining 1 cup agave, and remaining 1-1/2 cups coconut oil in the Vita-mix until smooth.
  3. Spread half of this cacao mixture on parchment-lined half sheet pan to create a thin layer. Place in freezer for 15 minutes to firm.
  4. Spread the almond butter mixture over hardened cacao layer. Then spread remainder of cacao mixture over almond butter; place in freezer until firm.
  5. Turn out pan onto cutting board, peel off parchment paper, and cut into small pieces. ENJOY 🙂
  6. Store extra almond butter cups in containers in refrigerator.

Amazing Raw “Peanut” Sauce and Zucchini Noodles

Shocker! I am making Zucchini Noodles 🙂 They are just so good and there are so many sauces you can serve with them! Tonight I made Natalia Rose’s  Delicious Amazing Raw “Peanut” Sauce from her The Raw Food Detox Diet Book. It really tastes super peanuty to me, but there are no peanuts in this sauce. Raw peanuts are really hard to find although they are available.

I love that this makes a full 2 cups of sauce, so we have enough for tonight for dinner and more for salads for lunch tomorrow! SO awesome and tasty!!

Males 2 cups

1 cup raw almond butter
2 tablespoons fresh ginger
1/2 cup water (to thin)
4 tablespoons fresh lemon juice
1/4 cup pure maple syrup
3 tablespoons Nama Shoyu soy sauce
4 tablespoon sesame oil
2-3 cloves of garlic
1/2 serrano or jalapeno chile

Blend all ingredients at high speed until smooth. This makes an unbelievable dipping sauce for carrots other veggies, and it is amazing as a salad dressing or a sauce over Young coconut noodles.

RAW Brownie Bites with Vanilla Icing

I was telling my husband that I posted the yummy Chocolate Mint Candies and he said I had to let everyone know about His favorite Raw Dessert! It really is so good and super easy! Blissful!!

Raw Brownie Bites with Vanilla Icing


Vanilla Icing

  • 2 cups Cashews
  • 2 tsp Vanilla Extract
  • 1/4 cups Raw Agave
  • 1/4-1/2 cups Water

Brownie Bites

  • 3 cups Pecans
  • 2 Tbsp Nut Butter (almond, cashew, etc.)
  • 1/4 cups Raw Agave
  • 1/4 cups Raw Cacao Powder
  • Dash of Celtic Sea salt

First make the icing so it has time to set in the fridge while you make the brownie bites. Make sure to use a Food Processor and not a Vita-Mix, as much as I love my dear Vita-mix it is not for this dessert 🙂 Blend the cashews till they are a fine texture. Add in the vanilla, agave and 1/4 cup of water. It is best to keep the icing thick, so add in more water as you process but never more than 1/2 a cup. After the icing is well combines fill up a pastry bag or ziplock and set in the fridge.

Once you have the icing in the fridge you can begin on the yummy brownie bites. Blend the pecans in the food processor till they are a fine texture. Add the ut butter, agave, raw cacao powder and salt and process until the mixture forms a ball around the blades. Transfer to a bowl and make sure everything is combined with your hands. This is a really fun part if you want to include your kids. Now form little balls of dough and flatten them to make the brownie bite rounds. They should be no more than 1 1/2″ wide. Once you have all the bites formed take your icing out the fridge and top the bites. If you want to dress them up more you can add cocoa nibs, dried fruit bits or anything else in your imagination.

These can be eaten immediately or set in the fridge to firm up. They will stay great in the fridge for over a week. ENJOY!


Raw Chocolate Mint Candies

Happy Passover everyone! I hope this year is especially liberating for you!

I wanted to share this super delicious Candy Recipe I made last month. I only had to eat one and was super happy! So keep them in your freezer in a ziplock and pull them out when you need that fix! They are so great!

Raw Chocolate Mint Candies

  • 1 c. coconut oil
  • 1/2 c. raw cashew butter or almond butter
  • 1/3 c. agave nectar
  • 1/8 c. raw carob powder
  • 1/2 c. cacao nibs
  • 10 drops peppermint essential oil or peppermint flavoring

Place all ingredients in a high speed blender and blend until smooth. Pour into molds or ice cube tray (that is what I did); freeze for at least 30 minutes before serving.
