Chocolate Peanut Butter Matzo Squares

Passover dessert is not really known for being so great (think dry flour less cardboard), but these were awesome! Chocolate & Peanut Butter to me is always a winning combination 🙂 Not everyone eats peanuts/legumes during the holiday so you can always substitute Almond butter and I’m sure would be amazing too! Also to make this as a Non-Passover dessert you can use graham cracker meal or maybe even try coconut flour! mmmm ideas!

Chocolate Peanut But

Chocolate Peanut Butter Matzo Squares

1 1/4 cup organic natural peanut butter (room temperature)
4 tablespoons Earth Balance (1/2 stick, softened)
1 cup vegan powdered sugar
1 cup of matzo meal (approx 3 sheets processed)
1 cup vegan chocolate chips
coarse sea salt (optional)

Combine the peanut butter and Earth Balance.  Use a hand mixer and if it gets to tough, use your hands.  Work the powdered sugar in 1/2 a cup at a time.  When that is thoroughly combined, add the matzo meal and 1/2 cup of the chocolate chips.   Combine well.  Lightly grease a small square pan (mine is a 8×8 baking pan) and set the mixture in by really pressing it down firmly so it is even.   Melt together 1/4 cup of the peanut butter and the other 1/2 cup of the chocolate chips.  Pour it over the top of the crust and spread it out evenly.  If using sea salt, sprinkle on (I did so on half) Place in the refrigerator to set (at least an hour.)  Cut into squares and serve!  Enjoy!

Peanut Butter Cookie Dough Bites

I have always loved to entertain but haven’t had the space in so long, especially the last year with 4 of us in a 1-bedroom apartment! But now that we have moved and have a bit more space, we are able to have more people over. And that means fun food for me 🙂 We are still new here but expect to see a bunch of party appetizers/HD’s/1-biters in the near future!

These were super good and went fast! They are a bit gooey to work with so next time I might add more thickener but no one was complaining 🙂 My mom tried them out and brought them right away to a party that weekend. See below for her changes as well.

Peanut Butter Cookie Dough Bites

1 cup Rice Chex
1 cup potato flakes
1 cup peanut butter
1/2 cup (1 stick) softened Vegan Butter (aka, Earth Balance margarine)
1 cup powdered sugar (less if you used sweetened peanut butter)
2 tablespoons ground flax seed
1 – 2 cups dark chocolate chips, plus more for melting and dipping

Pulse Rice Chex and instant mashed potatoes in a food processor until fairly pulverized. It doesn’t have to be flour-like, but in the neighborhood.
Add the peanut butter and softened Vegan Butter. Pulse for a few more seconds until everything is blended.
Add the powdered sugar and ground flax seed and pulse a few more times to mix it together.
Transfer the dough into a medium lidded bowl. Add the chocolate chips and stir so they’re evenly incorporated.
Put the lid on the bowl and place it in the fridge for a minimum of an hour so the dough firms up a bit. (makes it so much easier to work with!) Take tablespoon size pieces and roll into balls.

Optional – Double Boil chocolate and dip. Refrigerate until ready to serve.

My mom’s changes:

She used some almond butter also, instead of all peanut butter, added about 1/4 cup extra potato flakes to make a thicker batter,  used ground sunflower seeds and fiber one instead of chex. She didn’t dip into chocolate- just put a dollop of melted chocolate on each and swirled a little with back of my spoon.

Tofu and Veggie Stir-fry with Peanut Sauce


sauce
1/2 cup apple cider vinegar
1/2 cup tamari
3 tablespoons agave
2 tablespoons natural peanut butter

veggie stir-fry
3 teaspoons peanut oil or sesame oil
2 blocks extra firm tofu, drained, pressed & cubed
6 cloves garlic, minced
8 scallions, chopped, white and green parts separated
2 jalapenos, minced
2 red pepper, chopped
1 can water chestnuts, sliced
Dash of lime juice or lime wedges
Roasted Peanuts

Cooked Brown Rice

  1. Combine vinegar, tamari, agave and peanut butter and whisk until smooth.
  2. In a skillet or wok, add the oil and saute tofu, garlic, white part of scallions, jalapeno, and red pepper for 2-3 minutes. Add water chestnuts.
  3. Add the sauce and turn heat to low, stirring until combined.
  4. Serve over brown rice, garnished with green part of scallions, peanuts and either lime wedge or drizzled with lime juice.

Yummy Protein Goo Ball Bites

I have been doing my best to get as much protein as possible lately. (Thank goodness for Brendan Brazier’s Vega Bars!) I have made many versions of this snack throughout my life, but never added protein powder before and it really was such a perfect addition! I made both vanilla and chocolate versions to enjoy 🙂 Awesome!

These were so super fast to whip up and even faster to eat haha so make sure you make some extra for the perfect on the go snacks.

Yummy Protein Goo Ball Bites

Chocolate Version

1 scoop chocolate protein powder (as I mentioned above – I love Brendan Brazier’s products from Vega and his Shake & Go Smoothie Chocolate is amazing!!!!)
2 tablespoons Artisana coconut butter (this is the best stuff ever!)
2 teaspoons honey or agave
1 heaping teaspoon organic peanut butter (or other nut butter)
1/2 cup unsweetened dried shredded coconut
1/4 cup light coconut milk

Vanilla Version

1 scoop vanilla protein powder (my absolute favorite vanilla powder – Life Time Lifes Basics Plant Protein)
2 tablespoons Artisana coconut butter
2 teaspoons honey or agave
1 heaping teaspoon organic peanut butter (or other nut butter)
1/2 cup unsweetened dried shredded coconut
1/4 cup light coconut milk

Combine all ingredients. You might need a little more protein powder or coconut if too wet or some coconut milk if too dry. Roll into balls in your hands.

Optional add ons:

  • 1/2 cup dark chocolate chips
  • Extra shredded coconut

Melt chocolate over a double boiler and dip the bites in the bowl. Then sprinkle coconut over and freeze until firm.

Asian Cold Noodles With Spicy Almond Dressing

I have used Blue Print Cleanse many times over the years and always love their juices. When the fabulous ladies behind the juice company came out with a cook book of course I had to check it out. So far this first one is a winner!

I love pasta, but of course I don’t want to eat plain, white pasta all the time (especially after doing this cleanse). There are fabulous alternatives to traditional pasta – quinoa, rice, buckwheat (soba), etc. Soba is a deeeelish buckwheat noodle that cooks up super fast and tastes great with this sauce. This dish was great for dinner and just as good cold the next day for lunch. YUM!

Asian Cold Noodles With Spicy Almond Dressing
Recipe adapted from ‘The 3-Day Cleanse’ by Zoe Sakoutis and Erica Huss (The Blue Print Cleanse Ladies 🙂
Makes 4 servings

12 oz. buckwheat soba noodles
1 cucumber, peeled, seeded and chopped
1/2 cup scallions, sliced
1 red bell pepper, seeded and sliced
Spicy Almond Dressing (see below)
lime for garnish

1. Bring a saucepan of water to a boil and add the noodles.
2. Lower heat and simmer for 6-8 minutes until soba is tender, then remove from heat.
3. Strain noodles and rinse with cool water. Drain.
4. Place noodles in a bowl and add the cucumber, scallions and red bell pepper. Toss with spicy almond dressing.
5. Squeeze of lime before serving.

Spicy Almond Dressing
Makes 8 ounces

1/2 cup raw or roasted almond butter
1 tomato, chopped
2 Tbsp. Nama Shoyu or Bragg Liquid Aminos
2 Tbsp. extra virgin olive oil
3 tsp. fresh lime juice
2 tsp. agave nectar
3/4 tsp. ginger, peeled and chopped
1/4-1/2 tsp. ground cayenne pepper
1/2 tsp. sea salt

Blend all ingredients in a high-speed blender until completely smooth.

Spicy Almond Dressing

Kelp Noodles & Veggies in Peanut Sauce

Kelp Noodles are AWESOME! They are just seaweed yet you can eat them like noodles! Love it 🙂 They would go great with many different sauces. Have fun and experiment with them. They come out of the package a little crunchy. But after you rinse them and mix them with a sauce (containing some citrus or vinegar) they soften up and are super yummy!

I can never get enough ‘Peanut Sauce’ haha so I had to give this one a try. YUM! And with the grated daikon and carrot it was the perfect meal. I put the bowl in the Dehydrator for 30 minutes and it was great to have a slightly warmed meal.

Right out of the package they need a little help. But afterwards they were so good!

Kelp Noodles & Veggies in Peanut Sauce
Adapted from The Sunny Raw Kitchen

1 package kelp noodles

‘Peanut’ Sauce
3 tbs almond butter
2 tbs tahini
2 garlic cloves
2 1/2 tbs lime juice
1 tbs tamari
1 tbs raw sesame or coconut oil
1 tbs olive oil
1/2 tbs grated fresh ginger root
1/2 tsp salt
1/4 – 1/2 tsp red pepper flakes (depending on how hot you like it)
1/2 tsp salt
3 tbs agave
1/4 cup water

Blend until smooth. If necessary, add more water until desired consistency is reached.

Veggies
1 cup grated carrot
1 cup grated daikon

Place rinsed noodles and veggies in a large bowl. Toss with desired amount of Peanut Sauce. Let sit on the counter or in the Dehydrator for 30 minutes before serving.

Raw Fudge Brownies with frosting

The fudge brownies are delicious! The frosting on top really added to how yummy they were. It gave the brownies 2 different textures, awesome! I love how amazing raw desserts can be. Make a batch of these and keep them in the fridge. All you need is little slices, just a taste is enough. These will stay great for over a week.

Raw Fudge Brownies
adapted from Raw Lou Lou

1 Tablespoon melted cacao butter
2 Tablespoons cacao nibs
2 Tablespoons cacao powder
1/2 teaspoon hemp protein powder
1 Tablespoon carob powder
1 cup soaked macadamia nuts
2 Tablespoons ground flax seeds
1 handful goji berries
2 Tablespoons almond nut butter
1 Tablespoon coconut oil
1  1/2 Tablespoons agave
1/4 teaspoon cinnamon

Blend all of the above in a Vitamix or a food processor. Press into a loaf baking  pan and set in fridge.
Chocolate Frosting
1 avocado
1 Tablespoon agave
1 teaspoon vanilla extract
1 Tablespoon cacao powder
Blend all of the above together and spread on top of the fudge brownie mix and leave to set in the fridge. Enjoy!

Lettuce Wraps with Almond Butter Sauce

This was such a super fast and deelish meal! The sauce is perfect and very similar to a Thai Peanut Sauce. It is nutty, tangy and sweet! YUM! If you keep the veggies cut and ready to go this makes a snack in seconds! The sauce is also perfect to dip crudite in.

Lettuce Wraps

  • Boston Lettuce
  • Jicama, julienned or shredded
  • Carrots, julienned or shredded
  • Cucumber, julienned or shredded
  • Almond Butter Sauce

Place lettuce leaves and stack the Jicama, cucumbers and carrots in them. Drizzle almond butter sauce on top. Enjoy!
Almond Butter Sauce

  • 1/2 cup Almond butter
  • 3 cloves garlic, chopped
  • 1 ounce chopped onion
  • 1/2 tsp Curry powder
  • 4 T Almond or any non-dairy milk
  • 4 tsp Lime juice
  • 2 tsp Agave
  • 1/2 teaspoon salt

Blend or process all the ingredients until smooth.

Raw Zucchini Noodles and ‘Peanut’ Sauce II

I haven’t pulled out the spiralizer in a long time! During the raw part of the cleanse I was inspired to break it back out. YUM! I missed these zucchini noodles, so perfect, light and tasty! I love Peanut Sauce sooo much but when I make it at home I normally make it with Almond Butter so it is much healthier for us. Still comes out soo amazing 🙂

Raw Zucchini Noodles and ‘Peanut’ Sauce II

1/3 cup almond butter
2 garlic clove, minced
juice of 1 lime
3 Tablespoons agave nectar
3 Tablespoons Nama Shoyu
3 Tablespoons water
2 Tablespoons grated ginger
1/4 teaspoon red pepper flakes
1/2 teaspoon sea salt

In a blender puree together almond butter, garlic, lime juice, agave nectar, Nama Shoyu, water, ginger, red pepper flakes and sea salt until mixture is smooth. If needed add more water one tablespoon at a time to reach a desired consistency.

Raw Ice Cream Trio Sundae

I love Banana Ice Cream! It is always so deelish and you can have so much fun playing around and making so many yummy flavors. Michael and I were Loving this one! Sundaes are so comforting and fun to eat. They are even more fun when they are healthy and delicious!

Raw Ice Cream Trio Sundae
2 big servings

3 frozen bananas
2-3 tablespoons nut butter (I used almond)
2 tablespoon agave nectar
1 1/2 teaspoon vanilla
dash sea salt
2 1/2 cup frozen strawberries
1 1/2 tablespoons cocoa powder

toppings of your choice

  1. Start off my combining the frozen bananas,  nut butter, agave nectar, vanilla and dash of sea salt in a Vita-mix, blender or food processor until well combined and smooth.
  2. Have 2 serving bowls ready and using a large ice cream scoop or spoon, scoop out 1 scoop for each bowl and set in the freezer.
  3. Next, add the frozen strawberries to the frozen banana mixture in your blender and process until well combined.
  4. Take the bowls out of the freezer and add 1 scoop of the gorgeous strawberry “ice cream” to both bowls and put back into the freezer.
  5. Add the cocoa powder to the strawberry “ice cream” and process until well combined.
  6. Take the bowls out of the freezer and add 1 scoop of the chocolate  “ice cream” to both bowls and put back into the freezer to set.
  7. Feel free to eat as is or add toppings. I made a strawberry sauce out of agave and strawberries in the blender. I also used chocagave on top, yum! Use nuts, cocoa nibs, etc.
  8. DEVOUR and ENJOY 🙂
