Spinach Rice Gratin

This made a awesome weeknight meal! We used pre-cooked and leftover rice which made this super easy and quick to throw together. The whole family loved this! It went fast so we didn’t even get a pic of it cut into slices!

Spinach Rice Gratin

gluten-free

2 1/2 cups leftover/pre-cooked brown&/or white rice, room temp
1 1/2 cups cups well finely chopped spinach
8 ounces firm organic tofu, crumbled
15 black olives, chopped
1/2 medium red onion, diced
1/2 cup pine nuts or almonds, toasted
2 tablespoons olive oil
1 cup shredded Manchego cheese (or Parm, or Gruyere)
5 large eggs
1/2 teaspoon fine grain sea salt

Preheat oven to 400F degrees. Rack in the top third. Grease a 10-inch round baking dish, casserole pan, oven-proof pot with a bit of olive oil.

In a large bowl combine the rice, spinach, and tofu. Stir in the olives, and red onion, pine nuts and olive oil. Now stir in 1/2 cup of the cheese. In a small bowl whisk together the eggs, and salt. Fold the eggs into the rice mixture, pour into the prepared baking dish, and sprinkle with remaining cheese. Bake for 30 minutes or until the casserole is set, and the top toasty and golden. Remove from the oven, and sprinkle with remaining onions, olives, and nuts. Sprinkle with a bit more salt before serving – or taste and get a sense of whether you need any.

Fresh Bruschetta with Tomato, Basil and Red Onion

Love SUMMER!!! Fresh farm fresh veggies, picnics, vegan BBQs, pot-lucks and lots of family and friends FUN!

There is something so special about heading over to the farmers market and picking out the best and brightest fresh-picked veggies. Tomatoes are especially the best find since there is nothing like fresh summer tomatoes! Here is a perfect recipe for enjoying those fresh, juicy summer tomatoes. Yum!!

Fresh Bruschetta with Tomato, Basil and Red Onion

  • loaf of fresh bread, sliced (we used olive bread)
  • 2 large garlic cloves, chopped
  • extra virgin olive oil
  • 2-3 fresh plum tomatoes, seeded and chopped (or the best freshest looking tomatoes you see)
  • 1/4 red onion, chopped
  • 1 bunch of basil, chopped
  • Coarse salt
  1. Rub sliced bread with garlic and olive oil.
  2. Combine tomatoes, onion and basil in a bowl. Add extra olive and salt to taste.
  3. Spoon onto sliced bread and enjoy!

Make it a party and add a fresh Salad, Guac & Chips and fresh summer corn! Even just the thought of fresh summer corn has me ready for the next party! The best!

Avocado Kale Salad #3

I recently had a not so great Kale Salad at a restaurant. The menu ingredients sounded fabulous but with Kale you need to massage it a bit with your hands so it “wilts” and this one wasn’t. Here is my take on it, yum!!

We like a lot of kale salad and it keeps really well for a few days. But if you don’t want as much just half the recipe.

Avocado Kale Salad 

  • 3 heads lacanato kale, chopped
  • 1 avocado
  • 3-4 tablespoons lemon juice
  • 3-4 tablespoon Braggs, tamari or nama shoyu
This is just a base…Combine and Massage the avocado, lemon juice and braggs into the kale. Then add whatever is fresh, you have in the house or love in a salad.

I added — raw sunflower seeds, diced raw red onion, shredded carrots and diced red pepper.
