Raw Sweet Summer Creamed Corn

Summer Corn is Back!! Yeah!! I love Corn Chowder but I decided to make creamed corn tonight! YUM!!! It was really good, although I think I overdid it a little on the cayenne, so that is why I am recommending a pinch not a few shakes like I did. You could also make this creamier by adding soaked cashews into the base before blending. This could also be made sweeter by blending in some dates as well, depending on how you like it. Enjoy!

Raw Sweet Summer Creamed Corn

5 ears raw sweet corn
1/2 large cucumber, peeled and diced
1 Tablespoon nutritional yeast
1 Tablespoon flax seed oil/cold-pressed olive oil
1 teaspoon dried oregeno
2 teaspoon ground cumin
1 teaspoon onion powder
1/2 cup water
1/2 teaspoon of salt
1 teaspoon garlic powder
tiny, pinch of cayenne pepper

  1. Cut corn off cobs, setting aside the kernels from 3 of the cobs
  2. Blend the remaining corn and the rest of the ingredients until smooth.
  3. Pour puree into bowls and stir in the reserved corn.

    oh man, i was all set to make this soup today. I got a bag full of corn…and as i was on my way home i realized im out of nutritional yeast (because i put that on everything lol ) so i think i have to put off the soup until tomorrow : ( booo

    hahaha thats similar to what I did. I didn’t tell anyone they were vegan and what do you know people love them. Now my friends ask me to make them for them all the time hahaha. I love that its almost impossible to mess up the cookie, you can add anything to them.! yay for healthy(ish) cookies

      That trick always works! Once I even made vegan pigs in the blanket for the superbowl and everyone loved them!!! I only told them as I was leaving that they were not meat (but I suspect they knew since I was eating them too hahah)
